Orange Roughy Margarita Recipe

Ingredients
  • 2 tbsps minced fresh cilantro .
  • Salsa .
  • 2 tbsps lime juice .
  • 3 medium tomatoes, peeled, cored, & sliced .
  • 2 tbsps sliced purple onion .
  • 1 dash sugar .
  • 1-2 small jalapeno or serrano chili pepper, seeded & finely sliced .
  • 1 small garlic clove, minced .
  • 1/2 tsp salt .
  • 1 tsp salt .
  • 1 tbsp vegetable oil, divided .
  • 3 green onions, thinly sliced .
  • 3 garlic cloves, finely minced .
  • 1/3 c tequila .
  • 3/4 c fresh lime juice .
  • 1/3 c triple sec .
  • 1 1/2 lbs orange roughy fillets

Directions
  • Step #1 Place fish in a glass dish large enough to have a single layer of fillets.
  • Step #2 Combine tequilla, triple sec, garlic, salt, lime juice, & 2 tsps of oil.
  • Step #3 Pour over fish & rub all over the fillets.
  • Step #4 Cover up & marinate for 1 hr at about room temp or 3 hrs in the refrigerator - turning every once in awhile the fillets.
  • Step #5 Shortly before serving time, mix salsa ingredients in a serving bowl.
  • Step #6 Heat oiled grill to very hot.
  • Step #7 Remove fish from the marinade.
  • Step #8 Pat dry.
  • Step #9 Cook on the well oiled grill (or use fish cooking basket) for about 4 mins per side or until fish is opaque.
  • Step #10 Meanwhile boil marinade in saucepan for about 2 mins.
  • Step #11 Strain marinade.
  • Step #12 Spoon a little of the marinade over fish fillets on the serving plate.
  • Step #13 Serve with fresh tomato salsa.
