Debbie's Carrot Cake Recipe

Ingredients
  • 1 (20 oz) can crushed pineapple, drained .
  • 1/2 tsp allspice .
  • 1 tsp ground cinnamon .
  • 1 c sliced walnuts (or pecans) .
  • 2 c all-purpose flour .
  • 2 tsps baking powder .
  • 1 tsp baking soda .
  • 2 c grated carrots .
  • 1 1/4 c vegetable oil .
  • 4 eggs .
  • 1/2 c sweetened flaked coconut .
  • 1/2 tsp ground nutmeg .
  • 2 c white sugar .
  • 1/2 c raisins .
  • 1/2 tsp salt .
  • 2 tsps vanilla extract

Directions
  • Step #1 Preheat the oven to 350 degrees F.
  • Step #2 Coat a 10x15x2 inch baking dish or 10 inch Bundt pan with cooking spray.
  • Step #3 In a medium bowl, baking soda, salt, sift together the flour, baking powder, cinnamon & nutmeg.
  • Step #4 Set aside.
  • Step #5 In a separate larger bowl, mix together the eggs, sugar & vanilla by hand.
  • Step #6 Stir in the oil; the mixture should resemble pudding.
  • Step #7 Gradually stir in the the dry ingredients, coconut, then fold in the carrots, pineapple, walnuts & raisins.
  • Step #8 Pour the batter into the prepared pan, & spread evenly.
  • Step #9 Bake for 55 to 60 mins in the preheated oven, or until a small knife inserted into the cake comes out clean.
  • Step #10 Frost with cream cheese frosting of your choice.
