Refried Beans With Bacon Recipe

Ingredients
  • 1 tsp salt .
  • 1/2 lb bacon .
  • 2 garlic cloves, minced .
  • shredded cheese .
  • 6 c water .
  • 2 c dried red beans or dried pinto beans .
  • 1 large tomato, peeled, seeded, & sliced or 1 pint tomato juice

Directions
  • Step #1 Combine beans, water, garlic, tomato, & salt in slow cooker (aka crockpot).
  • Step #2 Cover up.
  • Step #3 Cook on high 5 hrs, stirring every once in awhile.
  • Step #4 When the beans become soft, drain off some liquid.
  • Step #5 While the beans cook, brown bacon in skillet.
  • Step #6 Drain, reserving drippings.
  • Step #7 Crumble bacon.
  • Step #8 Add half of bacon & 3 tbsps drippings to beans.
  • Step #9 Stir.
  • Step #10 Mash or puree beans with a food processor/blender.
  • Step #11 Fry the mashed bean mixture in the remaining bacon drippings.
  • Step #12 Add more salt to taste.
  • Step #13 To serve, sprinkle the remaining bacon & shredded cheese on top of beans.
  • Step #14 VARIATIONS:.
  • Step #15 Instead of draining off liquid, add 1/3 c dry min rice & continue cooking about 20 mins.
  • Step #16 Add a dash of hot sauce & a dollop of sour cream to individual servings.
  • Step #17 Instead of frying the mashed bean mixture, place several spoonfuls on flour tortillas; roll up, & serve.
