Goulash Soup Recipe

Ingredients
  • 4 (14 oz) cans chicken broth, plus enough water to equal 8 cans .
  • 1 1/2 c sliced onions .
  • 1 c uncooked macaroni .
  • 1 bay leaf .
  • 2 tbsps paprika .
  • 1 lb top round steaks, cut into 1/2-inch cubes .
  • 1 tbsp minced garlic .
  • 3 tbsps butter .
  • 1/2 c sour cream .
  • 2 tbsps flour .
  • 1/2 tsp fresh ground pepper .
  • 4 large carrots, sliced .
  • 1 (14 oz) can whole tomatoes, drained, sliced & juice reserved .
  • 3 tbsps tomato paste .
  • 1/2 tsp caraway seeds, crushed .
  • 1/2 tsp marjoram

Directions
  • Step #1 Melt butter in large Dutch oven over medium-high heat.
  • Step #2 Add beef & brown on all sides for 5 mins.
  • Step #3 Transfer to a plate; set aside.
  • Step #4 Add onion & garlic & cook for 5 mins.
  • Step #5 Add beef, stirring constantly, flour & paprika; cook, for 3 mins.
  • Step #6 Stir in tomato paste until smooth.
  • Step #7 Add chicken broth & water, carrots, tomatoes & reserved juice, caraway seeds, bay leaf, marjoram, & pepper.
  • Step #8 Bring to a boil; reduce heat & let simmer, stirring every once in awhile, for 30 mins.
  • Step #9 Add macaroni & let simmer until beef is just tender & vegetables are cooked through, about 20-30 mins.
  • Step #10 Remove bay leaf.
  • Step #11 Top each serving with sour cream.
