Chunky Beef Chili Recipe

Ingredients
  • 1 tbsp dried oregano .
  • 1 (14 1/2 oz) can reduced-sodium beef broth .
  • 2 tbsps chili powder .
  • salt & pepper .
  • 1 (12 oz) bottle lager beer .
  • 2 green peppers, sliced .
  • 6 garlic cloves, finely sliced .
  • 2 tbsps olive oil .
  • 2 jalapenos, finely sliced .
  • 1/4 c yellow cornmeal .
  • 1 tbsp ground cumin .
  • 2 medium onions, sliced .
  • 4 c cooked pinto beans (optional) or canned pinto beans (optional) or canned kidney beans (optional) .
  • 1 (14 1/2 oz) can sliced tomatoes .
  • 1 oz unsweetened chocolate, finely sliced .
  • 6 lbs beef chuck, cut into 1 . 5 inch cubes

Directions
  • Step #1 Heat the oil In a large-ish dutch oven over high heat.
  • Step #2 Spice up beef with salt & pepper & brown beef in batches, without crowding pot.
  • Step #3 Transfer browned beef to bowl or platter.
  • Step #4 Add onions, green peppers & jalapenos to pot & cook, until soft, stirring often, about 5 mins.
  • Step #5 Add garlic to pot & cook veggies one min more.
  • Step #6 Sprinkle top veggies with chili powder, cumin & oregeno.
  • Step #7 Stir weel.
  • Step #8 Return beef & any juices to pot.
  • Step #9 Stir in tomatoes with their juice, broth & beer.
  • Step #10 Bring to a boil.
  • Step #11 Reduce heat to medium-low & cover pot.
  • Step #12 Simmer until meat is tender, about 2 hrs.
  • Step #13 Remove from heat & let cool a few mins.
  • Step #14 Skim off surface fat.
  • Step #15 Stir in cooked beans, if desired.
  • Step #16 Remove one c of chili liquid & mix well with cornmeal.
  • Step #17 Stir the cornmeal paste into pot along with chocolate.
  • Step #18 Cook until thickens slightly, about 5 more mins.
  • Step #19 Serve with sour cream, shredded cheddar & sliced green onions, if desired.
