Mad Hatter Cupcakes Recipe

Ingredients
  • 1/2 c sugar .
  • 1 (3 oz) package instant vanilla flavor pudding & pie filling .
  • 1 tbsp maraschino cherry juice .
  • 1 1/2 tsps baking powder .
  • 1/4 tsp salt .
  • 1 c flour .
  • 1/2 tsp vanilla .
  • 16 dark chocolate-covered cherries .
  • 2 eggs .
  • 1/2 c milk .
  • 1/3 c butter .
  • 1/2 c maraschino cherries, sliced

Directions
  • Step #1 Line muffin c with paper baking c.
  • Step #2 Combine flour, pudding mix, baking powder & salt.
  • Step #3 In separate large mixing bowl, slowly add sugar to butter.
  • Step #4 Cream until light & fluffy.
  • Step #5 Using electric mixer at MED speed, add eggs, vanilla, cherries, & cherry juice; beat 1 min.
  • Step #6 Add dry ingredients alternately with milk, beginning with milk & ending with dry ingredients.
  • Step #7 Fill baking c 2/3 full.
  • Step #8 Bake at 350˚ for 15-17 mins.
  • Step #9 Remove from oven; quickly- make a slight indentation in the middle top of each ccake.
  • Step #10 Place a chocolate covered cherry candy into each indentation & return to oven for 2-3 mins to soften chocolate.
  • Step #11 Remove from oven & as soon as possible, swirl softened chocolate over top of ccakes, leaving cherries in place.
  • Step #12 Cool.
