Bokke Pootjes Recipe

Ingredients
  • 2 tsps water .
  • 1 1/4-1 1/2 c almonds, sliced or almonds, shaved .
  • 1/2 c sugar .
  • 1 c butter .
  • 2 tsps vanilla .
  • 2-3 oz semi-sweet chocolate baking squares .
  • 2 c flour .
  • 2 eggs, separated

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Cream butter & sugar together.
  • Step #3 Add egg yolks & vanilla.
  • Step #4 Beat until smooth.
  • Step #5 To egg whites in a shallow bowl, add water & beat with a fork.
  • Step #6 Shape dough into 1 1/2" to 2" long fingers with stubby ends.
  • Step #7 My Mom used to make them into little horseshoe shapes after she shaped them into the fingers.
  • Step #8 It gave them a neat appearance.
  • Step #9 Drop into egg whites.
  • Step #10 Roll in nuts.
  • Step #11 Bake for 14 - 16 mins.
  • Step #12 Cool.
  • Step #13 While the cookies cool, melt the chocolate squares using whichever method you prefer.
  • Step #14 I usually use the microwave & stir every 15 seconds.
  • Step #15 You could melt it with a double boiler if you wish.
  • Step #16 Dip ends in melted chocolate.
  • Step #17 Set on waxed paper to allow chocolate to set up.
