Low-fat, Low-cal Indian Vegetable Curry Recipe

Ingredients
  • 1 medium onion, finely sliced .
  • 100 g green beans, sliced .
  • 3 tbsps water .
  • 1 tbsp vegetable bouillon granules .
  • 200 g cauliflower, broken into small florets .
  • 1 tsp turmeric powder .
  • 1 tsp chili powder .
  • 100 g carrots, sliced .
  • 1 small apple, peeled cored & sliced .
  • 2 garlic cloves, crushed .
  • 20 g sultanas .
  • 1 tsp tomato puree .
  • 1 tsp ground ginger .
  • 1 pinch salt .
  • 100 g potatoes, sliced .
  • 300F ml water

Directions
  • Step #1 Mix water & bouillon, heat In a large-ish pan & stir fry garlic, onion, & apple for 5 mins.
  • Step #2 Add chili, ginger & turmeric & continue to stir fry carefully for a further min.
  • Step #3 Add green beans, cauliflower, carrots & potatoes plus 300F ml water.
  • Step #4 Stir in tomato puree, sultanas & a pinch of salt.
  • Step #5 Bring to the boil, reduce heat, cover & let simmer for 35 – 40 mins.
