Cranberry Zucchini Bread Recipe

Ingredients
  • 1 tbsp vanilla extract
  • 3 eggs
  • 1 tsp baking soda
  • 1/4 tsp ground nutmeg
  • 1/2 c sliced walnuts
  • 2 c sugar
  • 1 1/4 tsps salt
  • 2 1/2 tsps ground cinnamon
  • 1 1/2 c shredded zucchini
  • 1 c sliced fresh or frozen cranberries
  • 1 c vegetable oil
  • 1/2 tsp baking powder
  • 3 c all-purpose flour

Directions
  • Step #1 In a large bowl, mix the first seven ingredient.
  • Step #2 In another bowl, beat eggs; add zucchini, oil & vanilla.
  • Step #3 Stir into dry ingredients just until mixed.
  • Step #4 Fold in the cranberries & walnuts.
  • Step #5 Pour into two greased & floured 9-in.
  • Step #6 x 5-in.
  • Step #7 x 3-in.
  • Step #8 loaf pans.
  • Step #9 Bake at 350 degrees F for 50-60 mins or until a toothpick inserted near the center comes out clean.
  • Step #10 Cool for 10 mins before removing from pans to wire racks.
