Linguini With Walnut Sauce Recipe

Ingredients
  • 1/2 tsp salt .
  • 3 garlic cloves, thinly sliced .
  • 1/2 tsp pepper .
  • 1/2 c Italian seasoned breadcrumbs, DIVIDED .
  • 1/2 c pecorino romano cheese, freshly grated .
  • 1/2 c Italian parsley, sliced .
  • 1 lb linguine .
  • 1/4 c extra virgin olive oil .
  • 1 c walnuts, finely sliced

Directions
  • Step #1 Boil at least 6 quarts of salted water & cook linguini according to package directions until al dente.
  • Step #2 Meanwhile, 1/4 c of the breadcrumbs, heat the olive oil over a medium high flame until hot but not smoking, & lightly toast the walnuts, & the garlic.
  • Step #3 When linguini is nearly finished, remove 1/2 c of the boiling water & add to the walnut mixture.
  • Step #4 Drain linguini & add to walnut mixture, cooking over medium flame for 2 mins, stirring to coat.
  • Step #5 Add the parsley & grated cheese, stir, & then place this in a pasta bowl.
  • Step #6 Spice up with salt & freshly ground pepper.
  • Step #7 Garnish with remaining 1/4 c of bread crumbs.
