Greek Diced Vegetable Salad Recipe

Ingredients
  • 1 scallion, finely sliced .
  • 1 red bell pepper, sliced .
  • 1 garlic clove, pressed .
  • 1 large ripe tomato, sliced .
  • 2 tbsps olive oil .
  • 8 kalamata olives, pitted & sliced .
  • romaine lettuce leaves .
  • 2 tbsps fresh parsley, minced .
  • salt & pepper .
  • 1/4 tsp dried oregano, crumbled .
  • 1/2 lemon, juice of .
  • 1 cucumber, peeled, seeded, & sliced .
  • feta cheese, crumbled (optional)

Directions
  • Step #1 Combine cucumbers, bell peppers, oil, tomtoes, parsley, scallions, garlic, lemon juice, oregano & olives In a large-ish bowl.
  • Step #2 Add salt & pepper & toss well.
  • Step #3 You can serve as soon as possible, but it will taste better if it sits for about 30 mins before serving.
  • Step #4 Mound the salad on romaine lettuce leaves, & top this with feta.
