Rabbit Potstickers Recipe

Ingredients
  • 1/2 tsp sesame oil .
  • 1 egg .
  • 2 tbsps sliced bamboo shoots .
  • 1 (10 oz) package dumpling wrappers .
  • 2 oz ground pork .
  • 1 tbsp cornstarch .
  • 1 tsp rice wine .
  • 2 tbsps sliced black mushrooms (sometimes labeled "tree ears") .
  • 8 oz rabbit, meat, minced or ground .
  • 1/2 tsp sugar .
  • 1 tsp salt

Directions
  • Step #1 Combine rabbit meat with the pork, wine, mushrooms, salt, bamboo, sugar, egg, sesame oil & cornstarch In a large-ish bowl & mix well.
  • Step #2 Chill for 1 hr.
  • Step #3 Spread cooled filling over each wrapper & bring up edges & "pleat" to create small dumplings like purses or paper bags.
  • Step #4 Fry in a lightly oiled skillet until bottoms are brown.
  • Step #5 Pour in 1/2 c water or broth, cover the pan & steam until water evaporates.
  • Step #6 You may have to do this in batches.
  • Step #7 ) Serve with soy sauce or a dipping sauce made of soy sauce, sesame oil, grated fresh ginger & garlic.
