Ingredients
4 large carrots, peeled & roughly sliced (700gm) .
sea salt .
1/3 c olive oil .
1 tsp harissa .
fresh ground pepper .
2 garlic cloves, peeled & sliced
Directions
Step #1 Cook carrots in boiling salted water until tender.
Step #2 Drain well & while still warm process with garlic in a food processor/blender, adding oil to work into a smooth & creamy paste.
Step #3 Add harissa & process to mix.
Step #4 Spice up with salt & pepper to taste.
