Ingredients
  • 4 large carrots, peeled & roughly sliced (700gm) .
  • sea salt .
  • 1/3 c olive oil .
  • 1 tsp harissa .
  • fresh ground pepper .
  • 2 garlic cloves, peeled & sliced

Directions
  • Step #1 Cook carrots in boiling salted water until tender.
  • Step #2 Drain well & while still warm process with garlic in a food processor/blender, adding oil to work into a smooth & creamy paste.
  • Step #3 Add harissa & process to mix.
  • Step #4 Spice up with salt & pepper to taste.
