Zucchini Loaf Recipe

Ingredients
  • 1 c sugar .
  • 2 c flour .
  • 3/4 c canola oil .
  • 1/2 tsp baking soda .
  • 2 c grated zucchini .
  • 1 tsp vanilla extract .
  • 2 tsps ground cinnamon .
  • 2 eggs .
  • 1 tsp baking powder .
  • 1/2 tsp salt .
  • 1 c walnuts .
  • 1/4 tsp allspice

Directions
  • Step #1 Butter an 8.
  • Step #2 5 x 4.
  • Step #3 5 x 2.
  • Step #4 5 inch loaf pan.
  • Step #5 Line the bottom with a piece of parchment paper that fits exactly.
  • Step #6 Butter the paper & dust the pan with flour, tapping out the excess.
  • Step #7 Please note that the flour used to dust the pan is in ADDITION to what is called for in the ingredient list.
  • Step #8 Set the oven to 350 degrees.
  • Step #9 Spread the walnuts on a rimmed baking sheet.
  • Step #10 Toast them for 10-12 mins or until they were lightly browned.
  • Step #11 Remove them from the oven & set them aside to cool.
  • Step #12 Chop them coarsely.
  • Step #13 In a bowl, baking soda, salt, baking powder, sift the flour, cinnamon & allspice.
  • Step #14 In an electric mixer, sugar, beat the eggs, oil & vanilla.
  • Step #15 When the mixture is smooth, beat in the zucchini.
  • Step #16 With the mixer set on a lowish speed, beat in the flour mixture just until the batter is mixed (do not overmix).
  • Step #17 Remove the bowl from the mixer stand.
  • Step #18 With a wooden spoon, stir in the the nuts.
  • Step #19 Pour the batter into the prepared pan & smooth the top.
  • Step #20 Bake the loaf for 65 to 70 mins or until a skewer is inserted into the middle of the loaf comes out clean.
  • Step #21 Set the loaf on a rack to cool for 20 mins.
  • Step #22 Turn the loaf out onto the rack, remove the paper, & set the loaf right side up to cool completely.
