4 boneless skinless chicken breast halves, washed & dried .
2 tbsps extra-virgin olive oil .
1/2 c heavy cream or sour cream .
2 tbsps butter or margarine .
1 medium onion, coarsely sliced
Directions
Step #1 Preheat oven to 250°F Place chicken on a plate & press black pepper into them.
Step #2 In a heavy skillet, heat butter & olive oil.
Step #3 Cook chicen on medium heat until lightly browned.
Step #4 Remove chicken & place this in an ovenproof dish, then place this in the oven.
Step #5 Leave the pepper & juices in the skillet.
Step #6 Add onion & garlic to the skillet & brown over medium high heat, adding more oil if needed.
Step #7 Try not to brown the garlic too much.
Step #8 Add the mushrooms & saute unitl most of the liquid has evaporated.
Step #9 Remove skillet from heat & add brandy.
Step #10 Ignite the brandy & saute for 1 min.
Step #11 Add cream & stir.
Step #12 Add salt & pepper to taste.
Step #13 Take the chicken out of the oven, return it to the skillet, & heat for 2 mins on medium-low heat, letting the chicken absorb some of the sauce.
Step #14 Serve with the sauce.
