Almond-anise Biscotti From The Culi
Ingredients
1 tsp vanilla extract
2 c all-purpose flour
1 egg, beaten
1 tsp ground cinnamon
1 egg yolk
2/3 c white sugar
3 tbsps white sugar
1 egg
6 tbsps butter
1 1/2 tsps ground cinnamon
1/4 tsp salt
1 tsp baking powder
Directions
Step #1 Preheat oven to 325F degrees F (165 degrees C).
Step #2 Line baking sheets with parchment paper.
Step #3 Sift together the flour, baking powder & salt, 1 1/2 tsp cinnamon, set aside.
Step #4 In a medium bowl, cream together the 2/3 c sugar & butter.
Step #5 Beat in 1 egg, egg yolk & vanilla.
Step #6 Stir in the dry ingredients.
Step #7 On a lightly floured surface, divide dough into two pieces.
Step #8 Roll each piece into a log about 9 inches long & 1 1/2 inches wide.
Step #9 Place logs on the prepared baking sheet & flatten slightly.
Step #10 Brush with the beaten egg.
Step #11 Bake for 25 to 30 mins in the preheated oven, until golden & firm to the touch.
Step #12 Cool for 15 mins.
Step #13 On a cutting board, slice each log crosswise at a diagonal into 1/2 inch slices, using a serrated knife.
Step #14 Place back on the baking sheet, cut side down, & sprinkle with a mixture of the remaining cinnamon & sugar.
Step #15 Return to the oven for an extra 15 to 20 mins, until toasted.
Step #16 Cool on wire racks, & store this in an airtight container.
