Olive Oil Braised Potatoes Recipe

Ingredients
  • 2 medium idaho potatoes, washed, skin on, cut into 1/2-inch slices .
  • 6 sprigs fresh thyme .
  • 4 garlic cloves .
  • fresh ground black pepper .
  • 1 c extra-virgin olive oil .
  • gray salt

Directions
  • Step #1 Preheat the grill.
  • Step #2 Preheat the oven to 325F degrees F.
  • Step #3 Put the potato slices on the hot grill & cook for about 2 mins on each side to mark them.
  • Step #4 Remove from the grill & place them in a single layer in a baking pan.
  • Step #5 Spice up both sides with salt & pepper.
  • Step #6 Add enough olive oil to reach 1/3 up the sides of the potatoes.
  • Step #7 Turn the potatoes over to coat with the oil.
  • Step #8 Scatter the thyme & garlic cloves over the potatoes, if desired, sprinkle with a little more salt, & place this in the oven.
  • Step #9 After about 15 to 20 mins, the potatoes will be tender.
  • Step #10 Remove from the oven & let them cool in the oil.
  • Step #11 Serve at about room temp.
