Meatball Pot Pies Recipe

Ingredients
  • 1/4 tsp ground black pepper .
  • 2 tbsps sour cream .
  • 16 meatballs, thawed (or half of a 16 oz package meatballs) .
  • 1 double crust pie crust, I used half of Recipe # 45268 .
  • 1/2 tsp soy sauce (to taste) .
  • 1 (10 3/4 oz) can condensed golden mushroom soup .
  • 1 1/3 c mixed vegetables, I used peas, carrots, & corn .
  • 1/2 tsp ground thyme

Directions
  • Step #1 Preheat oven to 400°F.
  • Step #2 In a microwave-safe bowl, mix soup & sour cream; mix well.
  • Step #3 Add meatballs, covering with soup mixture.
  • Step #4 Add pepper & thyme; mix well.
  • Step #5 Add mixed veggies, stir, mixture will be thick.
  • Step #6 Microwave for 3 to 5 mins.
  • Step #7 Stir well & set aside.
  • Step #8 Divide pie dough into four equal pieces.
  • Step #9 Roll flat on a lightly floured surface.
  • Step #10 Place in 2 lightly oiled or sprayed 16 oz round mini casserole dishes.
  • Step #11 To each dish add a piece of dough, overlapping dough over sides.
  • Step #12 Bake for about 6 to 8 mins, or until lightly browned.
  • Step #13 Add 8 meatballs to each dish.
  • Step #14 Divide veggies over meatballs.
  • Step #15 Cover up with remaining dough.
  • Step #16 Crimp with fork to seal & make slit in top for steam to escape.
  • Step #17 Bake 30 to 35 mins, or until crust is desired color.
