Cornmeal Cherry Scones Recipe

Ingredients
  • 1 c buttermilk .
  • 2/3 c sugar .
  • 1 c cold unsalted butter, cut into 1-inch cubes .
  • 2 tbsps sugar (for topping) .
  • 1 1/2 c yellow cornmeal .
  • 1 tbsp baking powder .
  • 3/4 c dried sweet cherries .
  • 1/2 tsp baking soda .
  • 1/2 tsp kosher salt .
  • 2 c unbleached all-purpose flour

Directions
  • Step #1 Preheat oven to 425F F; line 2 baking sheets with parchment paper & set aside.
  • Step #2 Sift the flour, baking soda & baking powder together into a large bowl; add the salt, 2/3 c sugar & cornmeal & stir until mixd.
  • Step #3 Add the butter to the flour mixture & cut in with a pastry cutter until the mixture resembles small peas; mix in the dried cherries.
  • Step #4 Make a well in the center & add the buttermilk; mix briefly, just until the ingredients come together; let batter rest for 5 mins (it will be stiff & slightly sticky).
  • Step #5 Gently shape the dough into balls about 2 1/4 inches in diameter & place them on prepared pans about 2 inches apart; sprinkle with the remaining 2 tbsps sugar.
  • Step #6 Place the scones on the middle rack of the oven & as soon as possible turn the oven temperature down to 375°F.
  • Step #7 Bake for 20 to 25 mins or until the scones are golden.
  • Step #8 Cool on a wire rack.
