Mexican Lasagna Recipe

Ingredients
  • 1 c shredded cheddar cheese .
  • 2 c fat free sour cream .
  • 2 1/2 c salsa .
  • 2 tsps dried oregano .
  • 2 c water .
  • 2 lbs lean ground beef or lean ground turkey .
  • 1/2 tsp garlic powder .
  • 1 tsp ground cumin .
  • 1/4 c sliced green onions .
  • 12-14 lasagna noodles .
  • 1/2 c sliced black olives (optional) .
  • 1 (16 oz) can fat-free refried beans .
  • 1 c shredded monterey jack cheese

Directions
  • Step #1 Brown meat & drain off fat.
  • Step #2 Combine beans, oregano, cumin & garlic powder with meat & mix well.
  • Step #3 Boil noodles for approx 2 mins to cook firm (not soft) & rinse with cold water.
  • Step #4 Place 4 noodles in bottom of 9x13 pan with a little bit of water.
  • Step #5 Spread half of the meat mixture over the noodles.
  • Step #6 Sprinkle top handful of cheddar cheese over meat.
  • Step #7 Cover up with another layer of 4 noodles.
  • Step #8 Spread on remaining meat mixture & sprinkle on remaining cheddar cheese.
  • Step #9 Cover up with another layer of 4 noodles.
  • Step #10 Add remaining water to salsa & pour over top of noodles.
  • Step #11 Cover up pan with aluminum foil wrap & bake this at 350F for 40 mins.
  • Step #12 When noodles are tender spread sour cream over noodles.
  • Step #13 Spread green onions, olive slices & monterey jack cheese out on top of sour cream.
  • Step #14 Return to over uncovered for another 5-10 mins.
  • Step #15 Serve with nacho chips.
