Stove Top Mediterranean Zucchini Beef Stew Recipe

Ingredients
  • pepper .
  • 1/4 c oil (more as needed) .
  • 2 zucchini, halved lenghwise & cut crosswise into about 1/2 - 3/4-inch slices .
  • 1 tbsp minced fresh garlic (or to taste) .
  • 1 big onions, sliced .
  • 1 bay leaf .
  • 1/2 c dry red wine .
  • salt & pepper .
  • 1 (14 oz) can sliced tomatoes with juice .
  • 2 lbs stewing beef, cut into about 3/4-inch cubes .
  • grated parmesan cheese (optional but good to use) .
  • 1 1/2 c olives, pitted & halved (can leave whole, make sure that they are pitted) .
  • 2 tsps dried thyme .
  • 1/3 c flour .
  • seasoning salt (can use regular salt) .
  • 1 large bell pepper, sliced into large pieces .
  • 2-3 tbsps worcestershire sauce (or to taste) .
  • 1 c beef broth

Directions
  • Step #1 In a heavy plastic bag mix the flour with salt & pepper.
  • Step #2 Add in cubed beef; toss to coat, then shake off any excess flour.
  • Step #3 In a 6-quart deep pot over medium-high heat, with oil, brown 2 batches of beef for about 5 mins; remove with a slotted spoon to a bowl.
  • Step #4 Brown the remaining beef adding in more oil if needed.
  • Step #5 Add in the red bell pepper, onion & garlic; saute for 3 mins.
  • Step #6 Add in the browned beef & any juices that were left in the bowl, bay leaf, tomatoes with juice, broth, wine, Worcestershire sauce & thyme.
  • Step #7 Scrape up any browned bits left from the bottom of the pot with a wooden spoon; simmer covered for about 30 mins, or until the beef is tender.
  • Step #8 Spice up with salt & pepper.
  • Step #9 Add in zucchini & olives; simmer covered for 8-10 mins until zucchini is tender.
  • Step #10 Remove bay leaf.
  • Step #11 Ladle into serving bowls & top this with grated Parmesan cheese.
