1/2 c mayonnaise (or to taste, carefull not too much as will be too soggy) .
1 bunch sliced fresh parsley .
1 green pepper (capsicum) .
1 tsp cayenne pepper or peri-peri .
1 tsp turmeric .
1 c plain long grain rice
Directions
Step #1 PREPARATION.
Step #2 *bring adequate (two c?) amount of salted water to rolling boil, add rice, tumeric & raisins.
Step #3 *stir so that tumeric mixes into rice & can be absorbed, bring rice back to boil, then turn right down to simmer covered for rest of cooking time (10 - 12min?).
Step #4 *once rice is cooked, rinse/drain & set aside to cool.
Step #5 *finely chop both green pepper & white onion.
Step #6 *chunky chop (not fine) half of the peaches from the can.
Step #7 *add pepper, onion, peaches, chutney, cayenne pepper/peri peri, mayonnaise & salt & pepper to rice turning ingredients into rice carefully so as not to mash rice.
Step #8 *garnish with parsley.
Step #9 VARIATIONS.
Step #10 1- try adding 1/4 c brown rice which would need cooking separately as it takes longer to cook.
Step #11 just stir in theto plain rice before adding other ingredients.
Step #12 2- using a tbsp of either lemon or lime juice gives this dish a nice twist, or even try using lemon or lime rind for an extra zing.
