Almond Creme Recipe

Ingredients
  • 1 1/4 c evaporated milk .
  • 2 kiwi fruits (optional) .
  • 3/4 c boiling water .
  • 4 ripe fresh strawberries (optional) .
  • 1/2 c sugar .
  • 1/2 tsp almond extract .
  • 1/2 tsp vanilla .
  • 3/4 c cold water .
  • 1/4 oz unflavored gelatin (equilavents can be found at the bottom of the recipe.)

Directions
  • Step #1 Note: Cook time is the chill time.
  • Step #2 Measure cold water into small bowl.
  • Step #3 Sprinkle top gelatin over cold water.
  • Step #4 Let stand for 1 min.
  • Step #5 Add sugar to gelatin mixture.
  • Step #6 Stir until gelatin dissolves.
  • Step #7 Pour boiling water into medium bowl.
  • Step #8 Stir in gelatin mixture.
  • Step #9 Combine milk, vanilla & almond extract.
  • Step #10 Stir milk mixture into gelatin mixture.
  • Step #11 Divide mixture between four serving dishes.
  • Step #12 Refrigerate until set, about 3 hrs.
  • Step #13 Pare & slice kiwis.
  • Step #14 Arrange kiwi slices & strawberries over each dessert.
  • Step #15 Gelatin equivalents are One envelope of plain granulated gelatin = 1/4 oz = 1 tbsp, enough to gel two c liquid.
  • Step #16 Sometimes I substitute vanilla sugar for the sugar.
  • Step #17 This can be found in most European or gourmet markets.
  • Step #18 Or, make it yourself by combining two whole vanilla beans & sugar in a canister.
  • Step #19 The ratio of sugar to beans depends on how strong it is as well as how long you let it sit.
