Low Carb Chicken Piccata Recipe

Ingredients
  • 1/2 c white wine .
  • 1 lemon, pierced 6 times with a paring knife & cut in half .
  • 2 tbsps capers, drained .
  • 2 tbsps quick-cooking tapioca .
  • 2 lbs boneless skinless chicken breasts, fat trimmed, cut into bite-sized pieces .
  • 1/4 tsp Tabasco sauce (about 2 shakes) .
  • 2 tsps fresh parsley, finely sliced .
  • 3 tbsps butter .
  • 1/2 tsp kosher salt .
  • 1/2 tsp black pepper

Directions
  • Step #1 Grease the slow cooker (aka crockpot) crock with the butter (leave excess in the crock).
  • Step #2 In a liquid measuring c, mix the wine, Tabasco sauce, & tapioca; stir & add to the slow cooker (aka crockpot) crock.
  • Step #3 Add the chicken pieces & remaining ingredients, except for the parsley.
  • Step #4 Cover up & cook on LOW for 4 hrs.
  • Step #5 When done cooking, stir in the parsley, remove lemon halves, & serve.
