Ingredients
10-12 fresh basil leaves, shredded .
1 small red onion, thinly sliced .
2 tbsps red wine vinegar .
salt & freshly ground black pepper .
1/2 lb coarse texured bread, 2 to 3 days old .
1 small cucumber, sliced .
1/3 c extra virgin olive oil .
4 medium ripe tomatoes
Directions
Step #1 Break bread into pieces, place this in bowl & add cold water to barely cover; soak for about 5 mins.
Step #2 Drain bread & squeeze out as much of the water as possible with you hands; crumble the bread into a large bowl.
Step #3 Add the tomatoes, onion & basil; season this with salt & pepper, cucumber, Add the oil & the vingar & mix well to mix.
Step #4 Taste & ajust the seasoning; chill salad in the refrigerator for about 1 hr before serving, enjoy.
