Minnesota Cream Of Chicken & Wild Rice Soup Recipe

Ingredients
  • 1 c half-and-half cream .
  • 1/2 tsp dried thyme .
  • 1/3 c sliced onions .
  • 3 tbsps flour .
  • 1/2 c sliced celery .
  • 2 tbsps butter .
  • 1 c sliced carrots .
  • 1 1/2 c cut-up cooked chicken .
  • 1/3 c wild rice .
  • 3 1/2 c chicken broth

Directions
  • Step #1 Mix broth, thyme, celery, onions, carrots, uncooked rice, & 1/4 tsp pepper.
  • Step #2 Bring to a boil; reduce heat, cover & let simmer 1 hr, until the rice is tender.
  • Step #3 Melt butter, stir in the the flour, then the half-half.
  • Step #4 Cook & stir 1 min.
  • Step #5 Slowly add half-half mixture to the rice mixture, stirring constantly.
  • Step #6 Stir in the chicken & heat through.
