Upper Crust Potatoes Recipe

Ingredients
  • 1/2 tsp paprika .
  • salt, to taste .
  • 2 tbsps fresh parsley, sliced .
  • 1/4 c dried breadcrumbs .
  • 3 tsps garlic, minced .
  • 3/4 c cream cheese, at about room temp .
  • 2 bay leaves .
  • 2 tbsps butter .
  • pepper, to taste .
  • 3 lbs idaho potatoes (about 6) .
  • 1/4 c shallots, finely sliced (or white of scallion) .
  • 3/4 c parmesan cheese, freshly grated .
  • 1/2 c milk .
  • 2 tsps fresh rosemary, finely sliced .
  • 1 1/2 c heavy whipping cream

Directions
  • Step #1 Preheat the oven to 375*F.
  • Step #2 Oil the bottom of a shallow 2-quart baking dish.
  • Step #3 Peel & very thinly slice potatoes.
  • Step #4 Put them in a mixing bowl & add 3/4 c of the cream.
  • Step #5 Mix, & set aside.
  • Step #6 Melt the butter in a skillet, & add the shallots(or scallions) & garlic.
  • Step #7 Saute over low heat/flame for 3 to 4 mins.
  • Step #8 Do not brown.
  • Step #9 Add bay leaves & rosemary to skillet.
  • Step #10 Whisk in the cream cheese, milk, & remaining 3/4 c cream.
  • Step #11 Simmer, whisking constantly, until smooth, 2 to 3 mins.
  • Step #12 Add the paprika & salt & pepper.
  • Step #13 Discard the bay leaves & pour the mixture over the potatoes; toss carefully.
  • Step #14 Arrange the potato mixture in a baking dish, spreading it out evenly.
  • Step #15 Sprinkle top it first with the Parmesan, & then with bread crumbs.
  • Step #16 Bake until the potatoes are tender & the top is golden brown & bubbly, 1 to 1 1/4 hrs.
  • Step #17 Sprinkle top the parsley over & serve as soon as possible.
