Spicy Bolivian Chicken Recipe

Ingredients
  • 3/4 c peanut butter .
  • 1 tsp crushed red pepper flakes .
  • 2 large onions, sliced .
  • salt & freshly ground black pepper .
  • 2 garlic cloves, fineley sliced .
  • 3 c chicken broth .
  • 2 tbsps vegetable oil .
  • 1 (10 oz) package frozen peas, thawed .
  • 1/4 c breadcrumbs .
  • 1 1/2 lbs boneless skinless chicken breasts, cut into 1/2-inch strips .
  • 2 red bell peppers, cut into 1/4-inch strips

Directions
  • Step #1 Spice up chicken with salt & pepper.
  • Step #2 In a large frying pan, heat oil over med-heat/flame.
  • Step #3 Add chicken strips & sauté, for 3 mins, stirring, until chicken turns opaque.
  • Step #4 Remove chicken & set aside.
  • Step #5 Add onions, bell peppers, & garlic to pan.
  • Step #6 Sauté 3 mins, until onions are tender.
  • Step #7 Stir in hot pepper.
  • Step #8 Add broth & peanut butter.
  • Step #9 Simmer, stirring every once in awhile, for 10 mins.
  • Step #10 Stir in chicken, peas, & bread crumbs.
  • Step #11 Cook 5 to 10 mins, stirring every once in awhile, until sauce is thickened & mixture is heated through.
  • Step #12 Serve over rice.
