Ricotta Cheese Recipe

Ingredients
  • 2 tbsps lemon juice .
  • 1 quart milk

Directions
  • Step #1 Put the milk over low heat/flame, & bring to scald point (150 degrees).
  • Step #2 Remove from heat.
  • Step #3 Stir in lemon juice, & the milk will curdle.
  • Step #4 Let the mixture sit without refrigeration for 2-12 hrs.
  • Step #5 This is the mellowing process, & it seems that the more patient you are, the mellower the cheese.
  • Step #6 Place 2 thickenesses of cheesecloth in a strainer.
  • Step #7 Place the strainer over a bowl.
  • Step #8 Pour the mixture into the strainer, & allow the whey to drain several hrs until the curd is dry.
  • Step #9 Flavor as you choose.
  • Step #10 Mix with blue cheese, nuts, honey, peanut butter, roquefort, spices or eat plain.
