Aunt Diane's Bacon Scallops With Portabello Parmesan Pasta Recipe

Ingredients
  • 8 oz parmesan cheese, shredded .
  • pepper, to taste .
  • 24 scallops, large .
  • 8 oz linguine, cooked .
  • 1-2 portabella mushroom, sliced .
  • 12 slices bacon, cut in halves .
  • 3-5 tbsps olive oil .
  • 2 garlic cloves, minced

Directions
  • Step #1 Preheat oven to 450.
  • Step #2 Wrap each scallop with 1/2 slice of bacon & secure with toothpick.
  • Step #3 Place in single layer on foil wrap lined baking sheet with sides so grease doesn't spill.
  • Step #4 Place in oven for 15-25 mins, depending on size of your scallops.
  • Step #5 Watch closely as you want the bacon to be crispy but you don't want the scallops to be rubbery.
  • Step #6 While scallops are baking, saute garlic & portabello mushroom in 3 tbsps olive oil over med-heat/flame for 3-4 mins.
  • Step #7 Toss garlic & mushrooms with pasta & parmesan, adding more olive oil if desired.
  • Step #8 Once scallops are removed from oven, place with pasta & serve.
