Stuffed And Grilled Shrimp Recipe

Ingredients
  • 2 lbs super jumbo shrimp (about 12 to 14 shrimp) .
  • 4 oz allegro hot & spicy creole marinade .
  • 1/2 lb sharp white cheddar cheese (coon's brand) .
  • 1 lb hickory smoked bacon .
  • 1/2 lb monterey jack pepper cheese (cut in thin slices) .
  • toothpicks

Directions
  • Step #1 Cook the bacon until almost done, but not crispy.
  • Step #2 Must still be flexible.
  • Step #3 (I do this in the microwave).
  • Step #4 Butterfly shrimp almost completely through, place this in baggie with marinade & mix well.
  • Step #5 Marinate shrimp for 15 to 25 mins.
  • Step #6 Remove from marinade & insert one slice each of the two cheeses into the shrimp & fold closed.
  • Step #7 Use a bacon strip to wrap up the shrimp neatly & seal in the cheeses.
  • Step #8 Secure the bacon with toothpics.
  • Step #9 Place over fire on the grill, cook this until the bacon is finished & the shrimp are tender, about 5 mins or so depending on fire temperature.
  • Step #10 Remove toothpics & serve as finger food.
