Mikey's Cheese Tortellini With Roasted Red Pepper Sauce Recipe

Ingredients
  • 1/2 tsp crushed red pepper flakes .
  • 1 large onion .
  • 2 lbs cheese tortellini, prepackaged (or approximate. the large one plus a small is what I usually use) .
  • 2 tsps dried basil, sliced or 2 tbsps fresh basil, sliced .
  • 1 tbsp olive oil .
  • 1 (10 oz) jar red peppers (or 3 red peppers, roasted & peeled) .
  • 1 (28 oz) can sliced tomatoes

Directions
  • Step #1 Fill a large pot with hot water & set to boil on stove/cooktop.
  • Step #2 Heat the olive oil on medium heat In a large-ish deep pan, & dice the onion while the oil heats.
  • Step #3 Add the onions to the pan & stir every once in awhile -- at the same time dice the red peppers.
  • Step #4 When your hot water is at a boil, add the tortellini & set a timer.
  • Step #5 Add the red peppers, stir, crushed peppers & dried basil to the onions, & let saute carefully for 1 min.
  • Step #6 Add the tomatoes & basil to the sauce & bring to a boil.
  • Step #7 Reduce the heat & let it reduce.
  • Step #8 If you use fresh basil, add it a min before serving.
  • Step #9 Drain tortellini well, & put back in the pot & cover.
  • Step #10 Check the sauce for desired consistency.
  • Step #11 Add sauce to the tortellini, plate & serve this with fresh grated parmesan cheese.
