Peach Puff Pancake Recipe

Ingredients
  • 6 eggs .
  • 1/8 tsp salt .
  • 2 c peeled & sliced fresh peaches (3 medium) .
  • 1/3 c sugar .
  • 1 c milk .
  • 1 tsp almond extract or vanilla extract .
  • 1 c flour .
  • 6 tbsps butter

Directions
  • Step #1 Heat oven to 375°.
  • Step #2 Spray 2 1/2 quart casserole or 9x13 baking dish, with cooking spray.
  • Step #3 Melt butter in baking dish in oven.
  • Step #4 Beat eggs slightly in large bowl with wire whisk.
  • Step #5 Beat in flour, sugar, salt, milk & almond or vanilla extract until smooth.
  • Step #6 Stir peaches into butter in baking dish.
  • Step #7 Return to oven 2 or 3 mins until sizzling.
  • Step #8 Pour batter over peaches.
  • Step #9 Bake about 20 mins or until puffed & golden.
  • Step #10 Serve with warmed Peach preserves, if desired or Maple syrup.
  • Step #11 Note:.
  • Step #12 You may substitute 1 bag (16 oz) frozen sliced peaches, thawed & drained or canned sliced peaches.
