Puerto Rican Chicken Recipe

Ingredients
  • 1/4 c sliced cilantro .
  • cooked white rice .
  • 2 (8 oz) cans tomato sauce .
  • beans .
  • goya sazon goya, 2 packets or 1/2-1 tsp cumin .
  • 3 carrots, cut into large chunks .
  • oil .
  • 1 onion, cut into large chunks .
  • 2 garlic cloves, crushed .
  • 1 whole chicken, cut up & skin removed .
  • 2 large potatoes, peeled & cut into large chunks .
  • salt & pepper .
  • water .
  • garlic salt .
  • avocados

Directions
  • Step #1 Spice up Chicken with garlic salt, salt & pepper.
  • Step #2 Put a small amount of oil In a large-ish pot, brown chicken on medium high heat, but don’t cook all the way through.
  • Step #3 Add the garlic & onion & cook for a few mins.
  • Step #4 Add the potatoes, tomato sauce, cilantro, carrots, & sazon or cumin.
  • Step #5 There should be enough liquid to cover most of the food, if it looks like it needs a little more liquid add either another can of tomato sauce or some water.
  • Step #6 Reduce heat to low & cook this until the chicken & veggies are done, I usually cook it for at least an hr, the longer the better though, because as the potatoes break down they thicken the sauce.
  • Step #7 Serve with hot white rice, beans & slices of avocado.
  • Step #8 Yummy.
