Steamed Oysters In Tomato Vinaigrette Served In Sake Cups Recipe

Ingredients
  • 1 tbsp lemon juice .
  • 1/4 tsp sugar .
  • 2/3 c tomatoes (finely sliced) .
  • 1 pinch fresh ground pepper .
  • 1/4 tsp sea salt .
  • 1/4 tsp curry powder .
  • 10 small oysters, freshly shucked .
  • 1 tbsp fresh chives, snipped .
  • 2 tbsps olive oil

Directions
  • Step #1 In a small saucepan, & place over low heat/flame for about 2 mins, mix tomatoes through sugar, until simmering.
  • Step #2 Remove from heat, add chives & set aside.
  • Step #3 Prepare your steamer (bamboo basket over a wok works well).
  • Step #4 Place 1/4 tsp of tomato mixture in sake c, put oyster in c, top this with one tbsp of tomato mixture.
  • Step #5 Place in steamer & steam for 3 mins.
  • Step #6 BE VERY CAREFULL when removing c from steamer! Put a tooth pick in the oyster, let cool for 4 mins & serve as soon as possible.
  • Step #7 Use the toothpick to eat the oyster, & sip the vinegrette.
