Pecan Crunch Upside Down Cake Recipe

Ingredients
  • PECAN CRUNCH CAKE .
  • 1/2 c sugar .
  • 1/2 c milk .
  • 1/2 c sliced pecans .
  • 1 tsp vanilla .
  • 3/4 tsp salt .
  • 2 c sifted cake flour .
  • 1/3 c fine dry breadcrumbs .
  • 1 tsp salt .
  • 2 large eggs .
  • 1 1/4 c sugar .
  • 1/3 c butter, melted .
  • 2/3 c butter .
  • 2 tsps baking powder

Directions
  • Step #1 thoroughly butter bottom & sides of a fluted 1 quart tube pan or an 8" square pan.
  • Step #2 set aside.
  • Step #3 mix pecans, melted butter, sugar, crumbs & salt.
  • Step #4 press this mixture on bottom & 1" up sides of pan.
  • Step #5 set aside.
  • Step #6 cream butter & sugar.
  • Step #7 add eggs & beat until light & fluffy -- mix in vanilla.
  • Step #8 add sifted dry ingredients alternately with milk, starting & ending with dry ingredients.
  • Step #9 pour batter into pan.
  • Step #10 bake this at 350* -- 60-65 mins.
  • Step #11 cool 15 mins, remove this from pan.
  • Step #12 cool completely with crumb side up.
  • Step #13 pour vanilla glaze over crunch top.
  • Step #14 VANILLA GLAZE:.
  • Step #15 1/2 c sifted powdered sugar.
  • Step #16 2 tbls milk.
  • Step #17 1/2 tsp vanilla.
  • Step #18 Beat ingredients together until smooth.
  • Step #19 pour over top of crunch cake.
