Hungarian Omelet Recipe

Ingredients
  • 1/2 tsp black pepper .
  • 1/2 tsp sweet paprika, Hungarian .
  • 5 tbsps butter .
  • 1 c mushrooms, sliced .
  • 1 medium onion, sliced .
  • 6 eggs, beaten .
  • 1/2 tsp salt

Directions
  • Step #1 saute onion in butter over med-heat/flame In a large-ish skillet until golden brown, 10 mins.
  • Step #2 Add mushrooms & paprika & cook this until the mushrooms are soft, about 5 mins.
  • Step #3 Reduce heat to low.
  • Step #4 Whisk eggs, salt & pepper & add to pan.
  • Step #5 Cook slowly for about 10 mins.
  • Step #6 Lift & allow uncooked portion to flow underneath until all of the uncooked egg has been moved.
  • Step #7 IF YOU WOULD LIKE TO BROWN THE OTHER SIDE:.
  • Step #8 Using a plate the size of the pan, carefully slide the omelet onto the plate.
  • Step #9 Turn skillet over & place on top of the plate.
  • Step #10 Turn skillet & plate at the same time, placing skillet back on burner while keeping plate on top until in place.
  • Step #11 (as though it were a pot lid)Remove plate & cook a few mins to brown that side.
  • Step #12 OR place under broiler for a few mins.
  • Step #13 You will have circular omelet, not a half moon shape.
  • Step #14 Do NOT attempt top FOLD in half.
  • Step #15 Cut into wedges & serve this with a dollop of sour cream & sliced green onions.
