Curried Corn Recipe

Ingredients
  • 1 garlic clove, minced .
  • salt .
  • 2 medium tomatoes, peeled, seeded, & coarsely sliced .
  • 5 c corn, cut from cob or frozen corn .
  • pepper, freshly ground .
  • 1/2 tsp curry powder (hot Madras type) .
  • 1/2 tsp cornstarch .
  • 1 medium onion, coarsely sliced .
  • 1 tbsp butter .
  • 1 c coconut milk

Directions
  • Step #1 Heat butter in saucepan over med-heat/flame until foaming.
  • Step #2 Add onion & garlic to butter.
  • Step #3 Cook until lightly browned, stirring every once in awhile.
  • Step #4 Add curry powder, stirring to coat the onions well.
  • Step #5 Add corn, stir, & continue to cook.
  • Step #6 In a small bowl, add the coconut milk slowly to the cornstarch, stirring to prevent lumps.
  • Step #7 Add this mixture to the corn mixture, stirring well.
  • Step #8 Add remaining ingredients.
  • Step #9 Lower heat, & cook for about 7 mins, stirring every once in awhile.
  • Step #10 The coconut milk should be mostly absorbed.
  • Step #11 Serve warm.
