Potatoes A L'alsacienne Recipe

Ingredients
  • 2 tsps olive oil .
  • 1/2 tbsp fresh parsley, sliced .
  • 1/2 tbsp fresh tarragon, sliced .
  • 2 lbs potatoes .
  • 2 oz butter .
  • 1/2 tbsp fresh chives, sliced .
  • 1/2 tbsp fresh thyme leaves, sliced .
  • 4 oz bacon, sliced .
  • 4 oz button onions

Directions
  • Step #1 Peel the potatoes & cut into 1 inch pieces.
  • Step #2 Place in a pan of salted water, bring to the boil & cook for 5 mins.
  • Step #3 Drain well & set aside.
  • Step #4 Melt the butter in a frying pan with the olive oil, add the onions & bacon & cook for about 5 mins or until the bacon fat begins to run.
  • Step #5 Add the potatoes & cook for a further 10 mins or until the potatoes are tender & crisp turning every once in awhile.
  • Step #6 Add the herbs, salt & pepper & mix well.
  • Step #7 Serve as soon as possible.
