Almond Cinnamon Rolls Recipe

Ingredients
  • 50 g sugar (about 4 tbsps) .
  • 1/4 tsp salt .
  • slivered almonds .
  • 60 g butter .
  • 250 ml milk .
  • 100 g almond paste, sliced .
  • 1/2 tsp ground cardamom .
  • Topping .
  • 700-800 ml all-purpose flour .
  • 25 g fresh yeast .
  • pearl sugar .
  • 1 egg, beaten .
  • 1/2 tsp cinnamon .
  • 1 tbsp cinnamon .
  • Filling .
  • 50 g butter, softened .
  • 100 ml sugar

Directions
  • Step #1 Crumble yeast into a bowl.
  • Step #2 Melt butter, add milk & carefully heat the mixture to 37°C Pour over yeast & mix until yeast has dissolved.
  • Step #3 Add cardamom, cinnamon, salt & sugar & stir; add about 200 ml of the flour & stir.
  • Step #4 Add most of the remaining flour & knead dough by hand, adding flour if needed, until the dough is smooth & elastic & no longer sticks to the bowl nor to your hand.
  • Step #5 Sprinkle top some flour on top & cover: let rise for about 1 hr.
  • Step #6 Preheat oven to 220°C.
  • Step #7 Lightly flour the baking board & turn the dough on it.
  • Step #8 Roll dough out to a ~30 x 40 cm rectangle.
  • Step #9 Spread the softened butter on the dough, sprinkle sliced almond paste, sugar & cinnamon over the butter.
  • Step #10 Roll the dough up tightly & cut into 4 cm slices.
  • Step #11 Place rolls on a parchmented baking sheet, cover & let rise for 30 mins.
  • Step #12 Brush rolls with beaten egg & sprinkle with slivered almonds & pearl sugar.
  • Step #13 Bake for 10-15 mins.
  • Step #14 Cover up the rolls while cooling.
