Pineapple Filling For Cakes Recipe

Ingredients
  • 1/3 c pineapple juice (use the juice from the canned pinapple) .
  • 1/4 c all-purpose flour .
  • 1/2 c crushed pineapple, drained .
  • 1 egg yolk, slightly beaten .
  • 1 tbsp fresh lemon juice .
  • 1/2 c sugar

Directions
  • Step #1 In a saucepan, flour, mix sugar, pineapple juice & egg yolk; cook over low heat/flame until thickened (stirring frequently).
  • Step #2 Remove from heat, & stir in the lemon juice & crushed pineapple; mix to mix.
  • Step #3 Allow to cool before filling cake.
