Cauliflower With Capers En Vinaigrette S'il Vouz Plait Recipe

Ingredients
  • 1 tbsp caper marinade .
  • Dressing .
  • 2 tbsps olive oil .
  • 1 tbsp white wine vinegar (or tarragon vinegar) .
  • 1/4 c capers, drained (reserve 1 tbsp marinade) .
  • 1 large garlic clove, finely minced (for milder flavor, substitute elephant garlic) .
  • salt & freshly ground black pepper, to taste .
  • 1/4 c vegetable stock .
  • 2 tbsps fresh garlic chives, finely sliced (can substitute green scallion tops) .
  • 1 head cauliflower (2 to 2 1/2 lbs, NO brown spots!) .
  • 2 tbsps fresh Italian parsley, finely sliced .
  • 2 tbsps fresh basil, finely sliced

Directions
  • Step #1 In a small non-reactive bowl mix the dressing ingredients & whisk well.
  • Step #2 Cut the cauliflower into 1" florets.
  • Step #3 Crush the capers lightly with either a pestle & mortar or back of a spoon.
  • Step #4 In a sauce pan insert a steaming basket, fill the pan with 2" of water.
  • Step #5 Add the cut up cauliflower.
  • Step #6 Bring the water to the boil over high heat.
  • Step #7 Cover up pot tightly, reduce the heat to medium & steam for about 5 to 7 mins or the the vegetables are tender but not mushy.
  • Step #8 NOTE: The cauliflower can also be pan fried in olive oil if so desired.
  • Step #9 Carefully remove the steaming basket & set cauliflower aside.
  • Step #10 In a large salad bowl place the warm cauliflower then add the slightly crushed capers.
  • Step #11 Stir lightly.
  • Step #12 Next add the dressing & toss carefully to mix.
  • Step #13 Best eaten within 24 hrs.
