My Mom's Potato Salad Recipe

Ingredients
  • 1/2 tsp salt (to taste) .
  • 4 tbsps sugar (to taste) .
  • 1 tsp ground black pepper (to taste) .
  • 1 1/2 c mayonnaise .
  • 6 medium sized russet potatoes, washed, do not peel .
  • paprika (optional) .
  • 4 hard-boiled eggs, peeled & sliced .
  • 1 hard-boiled egg, sliced

Directions
  • Step #1 Place potatoes In a large-ish Dutch oven.
  • Step #2 Add enough water to cover potatoes, cover.
  • Step #3 Boil until fork tender, about 20 to 25 mins.
  • Step #4 Drain; do not peel potatoes at this point.
  • Step #5 Place in "fridge" for about 30 mins or until cool enough to handle.
  • Step #6 Remove from "fridge".
  • Step #7 Peel & cut into bite-sized pieces.
  • Step #8 In a large bowl, & sugar, salt, pepper, mix mayonnaise, mixing well.
  • Step #9 Add potatoes, making sure to coat all potatoes with mayonnaise mixture.
  • Step #10 Chill for about 4 hrs, or overnight is better.
  • Step #11 Before serving, lay one sliced hard-boiled egg in circle in the middle.
  • Step #12 Sprinkle top with paprika if desired.
