2 1/4 lbs tomatoes (mixed varieties, including cherry) .
2 oz parmesan cheese, freshly grated .
2 oz pine nuts .
5 tbsps olive oil .
8 oz goat's cheese (firm or soft) .
salt & pepper
Directions
Step #1 Pre-heat the oven to 375 F, 190 C/ gas mark 5.
Step #2 Roughly chop the tomatoes, leaving the cherry ones whole; heat 2 tbsps oil in a pad, add the sliced tomatoes & seasoning & cook for 10 mins (stirring every once in awhile) until softened; remove this from the heat & stir in the cherry tomatoes.
Step #3 Spoon half the tomato mix into an oven proof dish (1 litre/1 ¾ pints size) & crumble half of the goat’s cheese on top; repeat the layers.
Step #4 Heat remaining olive oil in a frying pan & lightly fry the pine nuts & breadcrumbs; remove this from the heat & stir in the half the parmesan; scatter breadcrumb mix over the tomatoes & cheese, then top this with the rest of the parmesan.
