Energy Muffins Recipe

Ingredients
  • 1 c dates, sliced .
  • 1/2 c wheat germ .
  • 3 tsps baking powder .
  • 2 tsps cinnamon .
  • 3 c flour .
  • 3 eggs, beaten .
  • 1/2 c safflower oil .
  • 1 tsp nutmeg .
  • 1 c coconut .
  • 1/2 c honey .
  • 3/4 c raisins, softened in water & drained .
  • 1 tsp salt .
  • 1 c rolled oats .
  • 1 c walnuts, sliced .
  • 2 c milk or buttermilk .
  • 1/4 c soya flour .
  • 2 c carrots, finely grated .
  • 1/4 c molasses .
  • 2 tsps mace

Directions
  • Step #1 Combine carrots, walnuts, dates & raisings & set aside.
  • Step #2 Mix together in large bowl flours, mace, coconut, baking powder, oats, wheat germ, salt, cinnamon & nutmeg.
  • Step #3 Combine remaining ingedients.
  • Step #4 Make a well in the centre of flour mixture & add liquid mixture slowly.
  • Step #5 If not moist enough add a small amount of water.
  • Step #6 Add vegetable mixture & stir in theches.
  • Step #7 Bake in grased muffin tins at 350 degrees F for 25 mins.
  • Step #8 Makes 3 dozen muffins.
