Roasted Asparagus With Sage And Lemon Butter Recipe

Ingredients
  • 2 lbs thin asparagus, ends trimmed .
  • 2 tsps olive oil .
  • salt .
  • 3 tbsps fresh lemon juice .
  • 1/2 shredded lemon, zest of .
  • 30 sage leaves .
  • 4 tbsps unsalted butter .
  • parmigiano-reggiano cheese, for shaving

Directions
  • Step #1 Preheat the oven to 450°.
  • Step #2 Toss the asparagus with the olive oil & 1/2 tsp of salt.
  • Step #3 Spread on a baking sheet & roast in the oven for about 5 mins, or until the spears are just tender when pierced with a knife.
  • Step #4 In a small skillet, melt the butter over moderately low heat.
  • Step #5 Add the sage leaves & cook, until the butter is lightly browned, stirring often, about 2 mins.
  • Step #6 Stir in the lemon juice & 1/4 tsp of salt.
  • Step #7 Transfer the asparagus to a warmed platter & spoon the sage-lemon butter on top.
  • Step #8 Garnish with the lemon zest, top this with shavings of Parmigiano-Reggiano cheese & serve.
