Ingredients
Filling .
1/3 c heavy cream .
1/2 tsp vanilla extract .
1 tbsp lemon zest, finely grated .
1 tbsp butter .
Crust .
2 store-bought 9-inch deep dish pie crusts .
1/3 c packed light brown sugar .
1/4 tsp ground cinnamon .
1/4 c packed light brown sugar .
Caramel nut topping .
1/2 c sliced walnuts .
2 tbsps lemon juice .
6 golden delicious apples, peeled, cored, & sliced .
3 tbsps all-purpose flour
Directions
Step #1 Heat the oven to 400F degrees F.
Step #2 Place one of the piecrusts in a 9-inch deep-dish pie plate, letting it drape oveer the edges.
Step #3 Combine the pie filling ingredients In a large-ish bowl, mixing well.
Step #4 Spoon the pie filling into the crust.
Step #5 Using a pastry brush & a small amount of water, moisten the edge of the bottom crust.
Step #6 Add the top crust, pressing them together to seal, & mold the edge to stand upright.
Step #7 Poke several holes in the top crust.
Step #8 Bake the pie on a baking sheet in the center of the oven for 30 mins.
Step #9 Reduce the oven temperature to 375 degrees F, loosely cover the pie with aluminum foil wrap, & continue baking for another 30 mins.
Step #10 Meanwhile mix the cream & brown sugar in a small saucepan.
Step #11 Heat to boil, then boil for 15 seconds more.
Step #12 Remove the mixture from the heat, whisk in the butter & vanilla extract, & set it aside.
Step #13 Remove the pie from the oven & increase the temperature to 425F degrees F.
Step #14 With a paring knife, poke several holes just inside the edge of the crust.
Step #15 Spoon the caramel sauce over the pie, spreading the sauce with the back of the spoon.
Step #16 (Some of the sauce will run down the crust into the holes).
Step #17 Sprinkle top the nuts on top, then return the pie to the oven & bake for 7 mins more, until the caramel bubbles.
Step #18 Allow the pie to cool for at least one hr before serving.
