Basmati Chicken Salad Recipe

Ingredients
  • 3/4 tsp salt .
  • 1/2 c thinly sliced green onions .
  • 1 c uncooked basmati rice .
  • 3 tbsps extra virgin olive oil .
  • 1 (15 1/2 oz) can chickpeas, rinsed & drained .
  • 1/4 c fat-free chicken broth .
  • 1/2 tsp fresh ground black pepper .
  • Salad .
  • 3 garlic cloves, minced .
  • 1/4 tsp dried oregano .
  • 2 c shredded rotisserie cooked boneless skinless chicken breasts .
  • 3 tbsps fresh lemon juice .
  • 1 tsp Dijon mustard .
  • 1 (14 oz) can artichoke hearts, drained & coarsely sliced .
  • 1 1/2 c water .
  • Dressing .
  • 1 tsp grated lemon rind .
  • 1/4 c sliced drained sun-dried tomatoes packed in oil

Directions
  • Step #1 To make the salad:Bring the water to a boil in a 3 quart saucepan; add in rice & garlic.
  • Step #2 Cover up, reduce heat, & let simmer 20 mins or until liquid is absorbed.
  • Step #3 Remove from heat & let this stand for 5 mins.
  • Step #4 Transfer rice to a large bowl.
  • Step #5 Add in chicken & next 5 ingredients; stir carefully to mix.
  • Step #6 To make the dressing: mix together all the dressing ingredients, stirring with a whisk.
  • Step #7 Drizzle over rice salad mixture, tossing carefully to coat.
