Lentil Soup Recipe

Ingredients
  • 2 carrots, peeled & sliced .
  • 2 garlic cloves, sliced .
  • 1 medium onion, sliced .
  • 4-6 fresh thyme sprigs .
  • 2 tbsps olive oil, plus extra for drizzling .
  • 1 lb lentils (approximately 1 1/4 c) .
  • 1 (14 1/2 oz) can sliced tomatoes .
  • salt & freshly ground black pepper .
  • 1 c shredded parmesan cheese .
  • 11 c low sodium chicken broth .
  • 2/3 c dried elbow macaroni .
  • 2 celery ribs, sliced

Directions
  • Step #1 Heat the oil in a heavy large pot over med-heat/flame.
  • Step #2 Add the onion, carrots, & celery.
  • Step #3 Add the garlic, & pepper & saute until all the vegetables are tender, salt, about 5 to 8 mins.
  • Step #4 Add the tomatoes with their juices.
  • Step #5 Simmer until the juices evaporate a little & the tomatoes break down, stirring every once in awhile, about 8 mins.
  • Step #6 Add the lentils & mix to coat.
  • Step #7 Add the broth & stir.
  • Step #8 Add the thyme sprigs.
  • Step #9 Bring to a boil over high heat.
  • Step #10 Cover up & let simmer over low heat/flame until the lentils are almost tender, about 30 mins.
  • Step #11 Stir in the pasta.
  • Step #12 Simmer until the pasta is tender but still firm to the bite, about 8 mins.
  • Step #13 Spice up with salt & pepper, to taste.
  • Step #14 Ladle the soup into bowls.
  • Step #15 Sprinkle top with the Parmesan, drizzle with olive oil, & serve.
