Beef And Green Bean Pie With Squash And Potato Topping Recipe

Ingredients
  • paprika .
  • SQUASH TOPPING .
  • 1 tbsp dried basil .
  • seasoning salt (I use about 2 tsps salt) .
  • 1 1/2 lbs lean ground beef .
  • 1 tsp dried thyme, divided (or to taste) .
  • 1 egg (to be added in towards the end) .
  • 1 pinch nutmeg .
  • 3/4 c milk .
  • 2-3 celery ribs, finely sliced .
  • pepper .
  • 1 (28 oz) can plum Italian-style tomatoes, drained & cut up .
  • 1 tsp cumin .
  • 3 large potatoes, peeled & cut into 1-inch cubes (use Russet baker potatoes, about 1-1/2 lbs) .
  • seasoning salt or regular salt & pepper .
  • 1 medium butternut squash, cut & seeded & cut into 1-inch cubes (about 1-1/2 lbs) .
  • 1 tbsp dried oregano .
  • 2 tbsps sliced fresh garlic (or to taste) .
  • FILLING .
  • 3 onions, sliced .
  • Tabasco sauce (optional) .
  • 1/2 c grated parmesan cheese (or to taste, can use grated cheddar cheese, or use both!) .
  • 2 tbsps worcestershire sauce (or to taste) .
  • 1 lb green beans, trimmed & cut into about 1/2-inch lengths .
  • 2 tbsps flour

Directions
  • Step #1 To make the topping: cook squash & potatoes in boiling water until tender (about 12-15 mins) drain & return to the pot.
  • Step #2 Add in milk, salt, pepper, nutmeg & Tabasco sauce (if using).
  • Step #3 Mash with a potato masher until fluffy; set aside to cool slightly.
  • Step #4 To make the filling: In a large skillet saute the onion & celery until soft (about 5-6 mins).
  • Step #5 Add in garlic & saute for 1-2 mins; remove to a plate.
  • Step #6 Add the ground beef to the skillet; cook this until browned (about 3-4 mins).
  • Step #7 Stir in basil, oregano, salt, Worcestershire sauce, cumin, pepper, the reserved onion mixture & the 2 tbsps flour.
  • Step #8 Add in the drained tomatoes & green beans; mix to mix & bring to a boil.
  • Step #9 Lower temperature; cover & cook for about 20 mins (seasoning with more spices to suit taste).
  • Step #10 Spoon/spread the ground beef mixture into a 13 x 9-inch greased baking dish.
  • Step #11 Sprinkle top with grated Parmesan cheese (can use grated cheddar cheese in place of the Parmesan cheese if desired).
  • Step #12 Beat the egg into the squash mixture.
  • Step #13 Spread over the beef filling.
  • Step #14 Make decorative swirls with a fork if desired.
  • Step #15 Sprinkle top with more Parmesan if desired & paprika.
  • Step #16 Bake in a 350 degree oven for about 40 mins, or until top is bubbly & golden brown.
  • Step #17 Cool for 20 mins before serving.
